Items such as aromatic braised pork with taro puree on betel leaves, popcorn chicken with aioli and pickled ginger and crispy sticky rice with sticky soy sauce and fresh herb salad are among the favourites.
KOTO Saigon head chef, Mr Franky Pham said that there is so much you can do with the local ingredients with their wonderful produce and flavours. He said they are showing the trainees how to appreciate the ingredients of their country while teaching them about cooking techniques from around the world. Franky Pham's previos role was in Australia as head chef at one of Melbourne's most popular restaurants.
KOTO Saigon restaurant is housed in a converted villa and down a secluded hem off Hai Ba Trung St in central Ho Chi Minh City. It features indoor and sheltered outdoor areas as well as private dining, bar and conference areas.
