Join us for cooking classes at the Koto on Van Mieu: 59 Van Mieu Street, Dong Da District, Hanoi.

The cost is $35 per person, $20 for people aged 12 - 16 years, under 12 years by negotiation.

Each class includes an introduction to Vietnamese cuisine & ingredients and a demonstration of techniques in a “hands on” class, taught by English speaking Chef Trainers. At the end of the class enjoy the dishes you have prepared in the garden setting at Xuan Dieu with a local beer or fruit cocktail. Depart with recipes, notes, ideas and inspiration.

Copies of KOTO a culinary journey through Vietnam are available for purchase from KOTO. Alternative class times for groups or individuals can be negotiated.

Classes are held every Monday night at the KOTO on Van Mieu, subject to bookings. Rates are valid from 31 August 2009 to 31 March 2010. Bookings & payment prior to the class are essential.

MEET YOUR CHEFS

Meet Ms Xam

After graduating at KOTO, Ms. Xam worked as a Pastry Chef at Hanoi's prestigious Press Club, while continuing her association with KOTO by working night-shifts in the restaurant. However, her desire to be a more active contributor to the success of trainees saw her return to KOTO on a full-time basis, where she is currently a pastry chef. Ms Xam's dream is to undertake further studies so she can continue to improve her culinary skills.

MEET Ms HUE

Ms Hue gained considerable experience working in Hanoi's Sofitel Plaza and Melia Hotel, along with Longrain in Melbourne, Australia. She then spent five years in the KOTO restaurant, 18-months of which was as Head Pastry Chef. In April 2009, Ms Hue became Head Chef of KOTO Catering and Hideaway Café. Ms Hue plans to undertake further studies in hospitality and hopes to one day become a Chef Trainer at KOTO.

MEET Mr DOAN

Mr Doan's impressive resume includes five-star hotels such as Hanoi's Metropole Hotel, which has enabled him to learn a diverse range of culinary techniques. He can also boast to have cooked for Ms Janette Howard, wife of the then-Prime Minister of Australia, John Howard. Over the past 7 years Mr Doan has been a valuable part of the KOTO team as Chef Trainer and mentor to hundreds of trainees.
